Chocolate Mermaid Cake Sculpture

This is Coral. This underwater beauty is made of 8 lbs of chocolate!
I keep looking at her and can’t believe my eyes. Did I really sculpt her? The pictures don’t even do her justice. She’s so beautiful that when I finished her head and stepped back, I almost cried. I got down on my knees and thanked God. I was in AWE.
Her tail and fins mimic the reef around her because she isn’t just in the sea, she’s part of it.
After weeks of research looking at images of reefs and how to sculpt coral reefs and faces, I hand-carved all of the other pieces on the cake.
Of course, my cakes can’t just look good. They have to taste just as amazing. The cake was a decadent chocolate cake infused with espresso and almond flavors. Mmmm…
